地理标志产品“宜宾酒”原酒理化指标与感官相关性分析 被引量:1

摘要 为了探究地理标志产品"宜宾酒"原酒理化指标与感官的关系,以115份"宜宾酒"原酒为样本,对其感官评分与理化指标的相关性进行了分析与探讨。结果表明,色与理化指标不相关,香、味、格评分及总分均与部分理化指标达到显著相关(P<0.05)甚至极显著相关(P<0.01)水平,相关系数R为0.192~0.495。同时建立并检验了香、味、格评分及总分与理化指标回归模型,配对t检验显著性结果Sig(双侧)分别为0.557、0.362、0.275、0.556,模型可用于"宜宾酒"原酒以理化指标模拟感官品评结果,丰富和完善了"宜宾酒"原酒的质量评价体系。 In order to explore the relationship between physicochemical indexes and sensory of the geographical indication product "Yibin Jiu" base liquor, using the 115 shares "Yibin Jiu" base liquor as samples, the correlation of sensory score and physicoehemical indexes was analyzed and dis- cussed. The results showed that the color was uncorrelated with physicochemical indexes. The scores of flavor, taste, style and total score all had sig- nificant correlation (P〈 0.05) and even extremely significant correlation (P〈 0.01) with some physicochemical indexes, and the correlation coefficient R was 0.192-0.495. Simultaneously, the regression model between evaluation scores (flavor, taste, style, total scores) and physicochemical indexes was established and tested. The significance results Sig (bilateral) of paired student t test were 0.557, 0.362, 0.275 and 0.556, respectively. The model could be used to simulate sensory evaluation results of"Yibin Jiu" base liquor with physicochemical indexes, which enriched and improved the quali- ty evaluation system of "Yibin Jiu" base liquor.
