综述了 3 4篇文献。介绍了金属硫蛋白的结构、理化性质和主要功能 ,并对国内外对金属硫蛋白的研究进展进行了简要介绍 ,说明了金属硫蛋白在食品工业中具有广阔的应用前景。
This article is a review with 34 references. It described the structure, physical, chemical properties of metallothioneins (MT) and its mainly functions. It introduced the current study progress of MT. It points out that the wide applications of MT are bright in food industry.
