摘要
利用2010—2012年中国居民营养与健康监测中连续3d家庭食物称重记账法收集的家庭食用油消费数据,分析我国居民食用油的摄入量现状及变化。依据家庭成员的膳食能量比计算我国2岁以上居民个体食用油摄入量。我国居民平均每标准人日食用油的摄入量为41.8 g,其中植物油37.1 g、动物油4.7 g。城市居民食用油摄入量为43.0 g、农村居民食用油摄入量为40.8 g,农村居民动物油摄入量高于城市居民,尤其是贫困农村居民的动物油摄入量最高,为9.2g。中小城市居民的平均摄入量已经超过大城市。与2002年相比,全国城乡居民食用油平均摄入量基本持平,其中动物油所占比例下降。目前,我国居民食用油的消费量仍偏高,农村居民动物油消费偏多。
We used the data from the 2010—2012 China Nutrition and Health Surveillance to analyze the status and changes of edible oil consumption in Chinese residents. Information on intake of edible oil was collected using the food weighted record for 3 consecutive days. Family members aged 2 years and over were interviewed. The average intake of edible oil for per day among Chinese residents was41. 8 g,including 37. 1g vegetable oil and 4. 7g animal oil. The intake of edible oil among urban residents was 43. 0 g,and 40. 8 g among rural residents. The intake of animal oil among rural residents was higher than urban residents,while the intake of animal oil for poor rural residents was the highest( 9. 2g). The average intake of edible oil for middle and small city residents had exceeded the big city. Compared with 2002,the average intake of edible oil for urban and rural residents was essentially flat,while the proportion of animal oil fell. At present,the consumption of edible oil in Chinese residents is still on the high side,and the intake of animal oil in rural areas is relatively high.
