基于荧光光谱的古井贡酒年份酒品质控制技术研究 被引量:4

摘要 探讨了荧光光谱结合相关系数法用以白酒品质控制的可行性。以古井贡8年酒为主要研究对象,以高通量分析平台获取各品牌白酒荧光光谱数据,具有样品用量少,分析速度快等优势,比较了同批次古井贡8年酒间的相关系数,以及不同批次古井贡8年酒、同品牌古井贡16年、26年酒、不同品牌白酒与古井贡8年酒(均值)间的相关性。结果表明,同批次古井贡8年酒样本间相关系数超过0.99,不同批次古井贡8年酒相关系数达到0.98左右,而古井贡16年、26年酒以及其他品牌白酒与古井8年酒相关系数值相对较低,依据相关系数值可初步实现古井贡8年酒在同批次、不同批次、同品牌、不同品牌白酒间的鉴别分析。据此,本方法有望实现古井贡酒年份酒简单、高效的品质控制鉴别。 The feasibility for quality control of China Baijiu (Chinese liquor) was discussed using fluorescence spectroscopy combined with correlation coefficient method. Using 8 year-aged Chinese Gujinggong Baijiu as main research objects, a high throughput analysis platform was applied to obtain China Baijiu experimental original data of fluorescence spectroscopy. The platform had the advantages of less sample needed and rapid analysis speed. Then, the correlation coefficient between the same batches of 8 year-aged Gujinggong Baijiu was investigated, and the correlation between 8 year-aged Gujinggong Baijiu (mean value) and different batches 8 year-aged Gujinggong Baijitu,16 year-aged Gujinggong Baijiu,26 year-aged Gujinggong Baijiu, different brands of Baijiu were fully investigated as well. The results showed that the correlation coefficient of the same batches 8 year-aged Gujinggong Baijiu was more than 0.99. The correlation coefficients of the different batches of 8 year-aged Gujinggong Baijiu with 8 year-aged Gujinggong Baijiu (mean value) reach 0.98. The correlation coefficients of the 16 year-aged Gujinggong Baijiu, 26 year-aged Gujinggong Baijiu and others different brand China Baijiu with 8 year-aged Gujinggong Baijiu (mean value) were relatively low. According to the correlation coefficient, the difference between 8 year-aged Gujinggong Baijiu with same batch, different batches, the same brand and different brands China Baijiu can be distinguished. Hence, the strategy was simple and efficient and had great potential application in quality control of aged Gujinggong Baijiu.
