2009—2015年铁岭市售面制食品中铝残留监测结果 被引量:1

Monitoring results of aluminum residues in commercially available flour products in Tieling City from 2009-2015

摘要 目的了解铁岭市售常见面制食品中铝残留状况,为保障食品安全提供科学依据。方法采集常见面制食品样品382份,其中凉粉、凉皮、拉皮72份,粉丝、粉条60份,小麦粉51份,油条82份,煎饼、鸡蛋饼49份,馒头花卷68份。采用GB/T 5009.182-2003《面制食品中铝的测定》中铬天青试剂比色法测定铝的含量。结果 382份面制食品中铝的检出率为100%,超标率为54.19%,最高检出值为1 370 mg/kg。其中油条超标率为100%,凉粉、凉皮、拉皮为86.11%,馒头花卷为66.18%。结论铁岭市售面制食品中铝残留较严重,应加强食品安全知识宣传及食品安全监管,降低因长期持续摄入而对居民特别是老年和青少年健康造成的影响。 [Objective]To understand the aluminum residues in commercially available flour products in Tieling City,provide the scientific basis for ensuring the food safety.[Methods]382 food samples of flour products were collected,including 72 samples of fresh jelly sheets,60 samples of dried sheets,51 samples of wheatmeal,82 samples of fried bread stick,49 samples of pancakes with eggs and 68 samples of steamed buns. The content of aluminium was detected by the chromazurine reagent colorimetric method of the Determination of aluminium in flour products(GB/T 5009.182-2003).[Results]The detection rate of aluminium in 382 samples of flour products was 100%,and the exceeding rate was 54.19%,with the maximum value of 1 370 mg/kg. The exceeding rate of fried bread stick was 100%,and the exceeding rate of fresh jelly sheets and steamed buns was 86.11% and 66.18% respectively.[Conclusion]Aluminum residues are serious in commercially available flour products in Tieling City. It is necessary to strengthen the publicity of knowledge about food safety and food safety supervision,to reduce the effect of long-term continuous intake on health of residents,especially the elderly and young people.
