摘要
目的对低档绿茶中提取茶多酚新工艺的工艺条件探讨。方法确定用20%乙醇提取,ZnCl2作为沉淀剂,PH值为6.4-8.0条件下沉淀为最佳工艺。并对影响氧化率的主要条件,PH值及时间进行研究验证。
The goal withdraws the tea polyphenol new craft to the low-grade green tea in the technological conditions discussion.The method determination with 20% ethyl alcohol extraction,ZnCl2 takes the precipitating agent,the PH value is under 6.4-8.0 conditions the precipitation is the best craft.And to affects the oxidation rate main condition,the PH value and the time carries on the research confirmation.
