摘要
旋光仪是测定物质旋光度的仪器,通过对样品旋光度的测定,可以分析确定物质的浓度、含量及纯度等。本文主要介绍了旋光仪用于测定食品中的糖类物质和谷氨酸钠的方法,拓展了常规实验仪器的使用范围,提高了物理化学专用仪器的利用率。
A polarimeter is a scientific instrument to measure the angle of rotation caused by passing polarized light through an optically active substance. Through determination of optical rotation, it can determine the substance＇s concentration, content, purity and so on. In this paper, application of polarimetry in determination of saccharides and sodium glutamate in the food was introduced. The application can effectively improve the utilization rate and expand the application scope of conventional experiment instruments.
