摘要
为促进乳酸菌发酵胞外多糖的乳化能力与抗氧化功能,利用中草药添加于实验组培养基与未添加的控制组,以比较三株乳酸菌(嗜酸乳杆菌,德氏乳杆菌保加利亚亚种,约氏乳杆菌)及三株混合菌发酵所生产胞外多糖的各项指标.结果显示:各项多糖的乳化指数与抗氧化指标(包含DPPH自由基清除能力、还原力及总酚含量),都表现实验组优于控制组(P<0.05)且分别大约1.5~2.4倍与1.5~2.2倍的效果,显示3种中草药对多糖乳化效果与抗氧化功能有促进作用.
In order to promote the emulsifying ability and antioxidant function of exopolysaccharides from fermented lactic acid bacteria, lactic acid bacteria were cultured without or with Chinese herbal medicine (CHM) in the control and experimental groups,respectively.The functions of exopolysacchar- ides obtained from three lactic acid bacteria strains including Lactobacillus acidophilus (LA), Lactoba- cillus delbrueckii suhsp.tJulgaricus (LB),Lactobacillus johnsonii LJ and mixed bacteria of three kinds (MIX, lactic acid bacteria) were compared using various indicators.The results showed that the emulsi- fication index and antioxidant functions of polysaccharides (including DPPH radical scavenging activi- ty, reducing power and total phenol content) in the experimental group were better than those in the control group (P〉0.05), increasing magnitude of 1.5-2.4 times and 1.5-2.2 times,respectively.Our results suggest that three kinds of CHM have promoting effect on the emulsion effect and antioxidant function of exopolysaccharides.
