摘要
对新疆生产的牛、马、驴、双峰驼乳粉脂肪酸(FA)含量和组成进行测定和比较分析。结果表明:乳粉中FA含量按从高到低排列依次为双峰驼乳粉、牛乳粉、马乳粉、驴乳粉,和4种家畜生乳中脂肪含量排序相一致。双峰驼乳粉短、中链FA所占比例显著低于牛、马、驴乳粉。马、驴乳粉硬脂酸所占比例显著低于牛、双峰驼乳粉。马、驴乳粉必需脂肪酸(EFA,亚油酸+α-亚麻酸)所占比例显著高于牛、双峰驼乳粉。马、驴乳粉的不饱和脂肪酸(USFA)/饱和脂肪酸(SFA)比值指数显著高于牛、双峰驼乳粉,单不饱和脂肪酸(MUFA)/SFA比值指数低于牛、双峰驼乳粉。4种乳粉中EFA占多不饱和脂肪酸(PUFA)的比例均在80%以上,马、驴乳粉EFA/PUFA比值指数高于牛、双峰驼乳粉。
The concentration and the chemical composition of the fatty acid in milk powder of dairy cattle, horse, donkey and bactrian camel in Xinjiang were measured and analyzed. The results showed that： the concentration of the fatty acid （FA） in milk powder from high to low were bactrian camel, dairy cattle, horse and donkey, which was consistent with same as the concentration of the fat in raw milk of these livestock. The proportion of the short chain fatty acid and medium chain fatty acid in the fatty acid of baetrian camel milk powder were significantly lower than dairy cattle milk powder, horse milk powder and donkey milk powder. The proportion of the stearic acid in the fatty acid of horse and donkey milk powder was sighificantly lower than dairy cattle and bactrian camel milk powder. The proportion of the essential fatty acid （EFA, Linoleic acid ands-Linolenic） in the fatty acid of horse and donkey milk powder was sigificantly higher than dairy cattle and bactrian camel milk powder. The ratio of USFA/SFA of horse and donkey milk powder was sigificantly higher than dairy cattle and baetrian camel milk powder, and the ratio of MUFA/SFA of horse and donkey milk powder was lower than dairy cattle and bactrian camel milk powder. The percent of EFA in PUFA of these four livestock milk powder were all higher than 80, and the ratio of EFA/PUFA of horse and donkey milk powder was sighifieantly higher than dairy cattle and bactrian camel milk powder.
