摘要
为探讨采后冬枣果皮转色的机制,研究了冬枣采后于(0±0.5)℃冷库贮藏60 d期间,果实呼吸强度、果皮叶绿素含量、PPO活性、POD活性、总酚含量变化及与转色之间的关系。结果表明:随着贮藏期的延长,果实呼吸强度平缓上升,果皮色泽逐渐加深,叶绿素被不断降解,PPO和POD活性逐渐增加,总酚含量逐渐下降,说明果皮色泽的变化与其组织氧化作用有关,酚类物质氧化而引起的果皮褐变参与了冬枣果皮色泽的加深。
In order to investigate the color-turning mechanism of pericarp of postharvest winter jujube,the relationship between the changes of respiratory intensity, chlorophyll content, PPO activity, POD activity, total phenolic content and color changing of winter jujube were studied during 60 days of storage at(0±0.5) ℃ in this paper. The results showed that the chlorophyll was degraded associated with the pericarp color deepening during the storage,at the same time, the respiratory intensity and activity of PPO and POD increased gradually,the content of total phenol decreased gradually, which suggested that pericarp color changing was correlated with the tissue oxidation, and pericarp browning caused by oxidation of phenols involved in color deepening in winter jujube.
