摘要
中国白酒作为中国传统的发酵产品,具有一定的保健功能。通过对白酒中活性功能因子成分及生理活性的分析,主要对其中有益健康的酸类、醇类、酚类、酯类、醛酮类物质以及其他功能因子进行阐述,为适量饮酒有益身体健康的理念提供一定依据。
Baijiu, as a traditional Chinese fermentation product, has certain healthcare functions. Through the analysis of the composition and the physiological function of the active functional factors in Baijiu mainly including acids, alcohols, phenols, esters, aldehydes, ketones and other compounds, we provided some scientific support for the concept that moderate drinking is good for health.
