摘要 近年来白酒中氰化物含量超标时有发生,危害饮酒者身体健康。对近年白酒氰化物含量超标事件、白酒中氰化物来源、检测方法及去除方法进行了概述。以期为我国白酒行业的有效监管及健康发展提供参考。 Cyanide content in Baijiu in excess of standards occurs sometimes in recent years, which would damage consumers' health. In this paper, accidents of cyanide content in excess of standards in recent years, the source of cyanide in Baijiu, cyanide detection methods, and cyanide removal methods were summarized, which provided useful reference for effective supervision and health development of Baijiu industry in China.(Trans. by YUE Yang)
