天然类胡萝卜素是一大类重要的食品着色添加剂、营养强化剂和抗氧化剂,本文概括了叶黄素、玉米黄质、虾青素、番茄红素和β-胡萝卜素的理化性质和卓越的生理功能,介绍了以上各类色素的加工工艺,展示了多种不同的主要剂型与在产品中的应用,说明了类胡萝卜素潜在的巨大的市场价值和提升空间。
Natural carotenoid is a kind of very important food coloring additive,nutrition enhancer and antioxidants. In this article,we summarized the physic-chemical characters and physiological functions of lutein,zeaxanthin,astaxanthin,lycopene and β-carotene,as well as the processing technique of them. We demonstrated a variety of main formulations and their applications in the product development. The huge market value and the promotion space of carotenoids are also described.
