摘要
细菌在自然界中容易形成附着于各种含水表面的生物被膜群体。因生物被膜中的细菌能够抵抗消毒剂和抗菌药物,故其一旦在食品加工过程中形成,会引起包括冷热传递受阻、管路阻塞、食物腐败甚至传染病等诸多问题。本文对生物被膜的结构、形成机制、检测方法和防治措施展开综述,特别指出超声波技术对生物被膜的控制效应,并对今后的研究方向提出展望。
Bacteria form surface-attached biofilm communities in nature. Incontrast to free-living cells, bacterial cells within biofilms resist sanitizers and antimicrobials. Whilebuilding biofilms, biofilm bacteria can cause arange of problems to food processing including reduced heat-cold transfer, clogging water pipelines, food spoil age and they may cause infections among consumers. In this paper, the structure, formation mechanisms, detection methods and control strategies of the bacterial biofilm were reviewed, the effect of ultrasound on the bacterial biofilm in particular were introduced, and the future research directions were indicated.
