摘要
通过Sepharose CL-6B柱层析分离法将实验室提取猕猴桃粗蛋白分为GP1,GP2两个组分,分别测粗蛋白(CGP)、GP1、GP2,1,1-二苯基-2-苯肼自由基(DPPH·)的清除率、羟基自由基(·OH)的清除率、ABTS自由基的清除率以及总还原能力来初步鉴定猕猴桃糖蛋白的体外抗氧化性。经过试验可知,猕猴桃糖蛋白对DPPH、羟基自由基、ABTS均有一定的清除力,但其清除力度均低于同等浓度下的VC溶液。
Crude protein of Actinidia deliciosa was separated into two components of GP1 and GP2 by Sepharose CL-6 B column chromatographic separation method.The crude protein(GPP),GP1,GP2,1,1-diphenyl-2(DPPH·) free radical scavenging rate,scavenging rate of hydroxyl radical(·OH),radical scavenging ability of ABTS radical and total reducing ability were used to preliminarily determine the antioxidant activity of kiwifruit glycoprotein in vitro.The results showed that kiwifruit glycoprotein had some scavenging power on DPPH,hydroxyl radical and ABTS,but its scavenging intensity was lower than VC solution at the same concentration.
