摘要 对辽宁花生22个品种的营养成分进行了详细地测定、分析和评价。结果表明:辽宁花生脂肪酸含量为48.1%~49.8%,蛋白质含量为20.3%~31.3%,含糖量为3.54%~6.53%。辽宁花生品种中没有高油脂品种;必须氨基酸占总氨基酸的28.8%,8种必需氨基酸中亮氨酸(1.24 g/100 g^1.77 g/100 g)、苯丙氨酸(0.98 g/100 g^1.36 g/100 g)和赖氨酸(0.90 g/100 g^1.08 g/100 g)含量比较高,色氨酸(0.16 g/100 g^0.28 g/100 g)和蛋氨酸(0.13 g/100 g^0.27 g/100 g)含量比较低;脂肪酸中含饱和脂肪酸含量为平均值22.87%,不饱和脂肪酸含量为77.13%,其中油酸含量为平均值42.44%,亚油酸含量为平均值33.49%。油脂中含有必需脂肪酸亚油酸、α-亚麻酸和花生四烯酸等;O/L平均值为1.27,辽宁花生品种和花生制品比较耐贮藏。 The nutrients of 22 Liaoning peanut varieties were measured, analyzed and evaluated in detail. The results showed that the Liaoning peanut fatty acid content of 48.1 %-49.8 %, protein content of 20.3 %-31.3 %, sugar content of 3.54 %-6.53 %. Liaoning peanuts not high fat varieties. Essential amino acid accounted for 28.8 % of total amino acids. In 8 kinds of essential amino acids, leucine (1.24 g/100 g-1.77 g/100 g), pheny-lalanine (0.98 g/100 g-1.36 g/100 g) and Lysine (0.90 g/100 g -1.08 g/100 g) contents are higher. Tryptophan (0.16 g/100 g-0.28 g/100 g) and methionine (0.13 g/100 g-0.27 g/100 g) contents were low. Fatty acid contain-ing saturated fatty acid content was 22.87 %, unsaturated fatty acid content was 77.13 % , The average oleic acid content was 42.44 %, and average linoleic acid content was 33.49 %. Oil contains essential fatty acids, in-cluding linoleic acid, alpha linolenic acid and arachidonic acid. O/L mean value of 1.27, Liaoning peanut prod-ucts and peanut varieties more resistant to storage.
