摘要
为了实现对猪肉肠掺杂鸡肉的快速识别分析,利用法国Alpha M O S公司生产的α-Astree型电子舌,采集掺杂不同比例鸡肉的猪肉肠的传感器信息,采用主成分分析(PCA)和判别因子分析法(DFA)进行定性分析,采用偏最小二乘法(PLS)建立预测模型进行定量分析。结果显示,PCA和DFA对掺杂不同比例鸡肉的猪肉肠都能有效区分,尤其在DFA分析中,仅第1、第2个判别因子的累计贡献率就达到99.893%,识别效果十分显著;采用偏最小二乘法建立的PLS预测模型,其决定系数R^2为0.9938,经验证得到的相对误差均控制在10%以内,表明该模型具有极显著意义,具有一定的可行性。
An electronic tongue of the company Alpha M O S was used to rapidly discriminate and quantify the chicken adulteration of pork sausage on the basis of the quantitative data. By analyzing the electronic tongue sensor data, the method of PCA and DFA was applied to do qualitative analysis of the solution. The results indicated that electronic tongue could effectively recognize different chicken adulteration proportion of pork sausage. Especially, the accumulated variance contribution rates of discrimination factor 1 and 2 were 99.893% in DFA charts. Besides, the electronic tongue sensor data of different chicken adulteration proportion pork sausage was analyzed by partial least squares analysis(PLS) to build the predictive model for quantitative analysis of the solution. The results showed that the coefficient of PLS mode was 0.9938, and the relative error of this mode between predicted and measured value was within 10%, which showed that the model has certain feasibility.
