不同产地压榨山茶油理化性质及组分比较分析 被引量:9

摘要 测定了不同产地压榨山茶油的理化性质、脂肪酸及矿物质含量,并对测定结果进行统计分析。结果表明:不同产地山茶油酸价为海南>湖南>江西和广西(P<0.008),江西、广西间差异无统计学意义(P>0.008);过氧化值为湖南>江西、广西和海南(P<0.008),江西、广西、海南间两两比较差异无统计学意义(P>0.008);各产地山茶油折光指数两两比较差异无统计学意义(P>0.008)。不同产地山茶油中均含有6种脂肪酸,其中海南山茶油中油酸和总不饱和脂肪酸含量均最低,但亚油酸含量最高(P<0.05)。不同产地山茶油中均含有钙、镁、铁、锌元素,其中海南山茶油钙、锌含量最高,广西山茶油镁、铁含量最高。 The physicochemical properties, fatty acids and minerals content of camellia oil from different areas were detected and the detection results were analyzed by statistical method. The results showed that the acid value of camellia oil from different areas was as follows: Hainan〉Hunan〉Jiangxi and Guangxi (P〈0.008), these was no statistically significant difference between Jiangxi and Guangxi (P〉0.008) ; The peroxide value was as follows: Hunan〉Jiangxi, Guangxi and Hainan (P〈0.008), there was no statistically significant difference among Jiangxi, Guangxi and Hainan (P〉0.008); The refractive index of camellia oil from different areas had no statistically significant difference (P〉0.008). Six kinds of fatty acid were detected in camellia oil from different areas. The content of oleinic acid and total unsaturated fatty acid in camellia oil from Hainan province were lower than those of other province, but the content of linoleic acid in Hainan camellia oil was highest (P〈0.05). Camellia oil from different areas all contained calcium, magnesium, iron and zinc. The calcium and zinc in Hainan camellia oil were highest, while magnesium and iron in Guangxi camellia oil were highest.
