摘要
茶多酚由茶叶中提取,有较强的抗氧化性及抗菌性,被广泛应用于食品的贮藏和保鲜中,并获得较好的成效。介绍了茶多酚在食品贮藏中的保鲜机理,分析了茶多酚在果蔬、肉类、油脂、水产品保鲜中的应用现状,最后对茶多酚的应用前景进行了展望。
Tea polyphenols extracted from tea leaves have strong antioxidant and antimicrobial properties, are widely used in the storage and preservation of food, and have achieved better results. The paper introduces the mechanism of tea polyphenols in food storage, analyzes its application status in the storge of fruit and vegetable, meat, oil, and finally the application prospect of tea polyphenols are prospected.
