摘要
大球盖菇被联合国粮农组织列为向发展中国家推荐栽培的食用菌之一,与其他食用菌种相比具有易栽培、成本低、活性成分丰富等特点。该文归纳了大球盖菇的功能成分及其保健功能,并综述了大球盖菇的保鲜工艺与加工工艺研究现状,对大球盖菇研究方向进行展望,以期为大球盖菇今后的开发利用提供参考。
Stropharia rugoso-annulata( Farlow ex Murrill) is one of the edible fungi recommended by the United Nations Food and Agriculture Organization( FAO) to cultivate in developing countries. It is easier to cultivate with low cost and rich in active ingredients compared with other edible fungi. In this paper,the functional components,health functions,progress of processing and preservation technology of Stropharia rugoso-annulata were summarized;future research was proposed to provide a reference for the exploitation and utilization of this resource.
