摘要
将10株乳酸菌分别接种到MRS肉汤、鲜牛乳、蔬菜汁培养基中进行发酵。发酵48h后用羟胺法检测超氧化物歧化酶,可见光法检测过氧化氢酶的活力。结果表明:在MRS肉汤培养基中,LA,LCP,BL,LC,LP,LCR,ST,LR,SF,LB产SOD酶和CAT酶活力分别为38.45,36.24,26.21,28.43,14.62,17.52,12.53,14.82,9.82,15.21U/mL和8.56,7.23,5.36,3.46,2.09,2.12,1.25,2.49,1.49,2.23U/mL;在鲜牛乳培养基中产SOD酶和CAT酶活力分别为50.34,47.51,43.26,39.45,19.98,14.92,21.03,13.62,17.24,17.03U/mL和9.89,8.56,6.57,4.03,2.96,2.98,2.25,3.02,2.83,3.12U/mL;在蔬菜汁培养基中产SOD酶和CAT酶活力分别为118.56,115.42,104.34,99.58,82.25,80.91,80.03,76.20,82.03,78.92U/mL和38.84,41.06,28.53,31.27,21.25,22.03,12.51,15.12,11.12,2.73U/mL。
Ten lactic acid bacteria are inoculated into MRS broth, fresh milk, vegetable juice media for fermentation. After 48 h of fermentation, the superoxide dismutase is detected by hydroxylamine method, and the activity of catalase is detected by visible light method. The results show that the enzyme activities of SOD and CAT in LA, LCP, BL, LC, LP, LCR, ST, LR, SF and LB of MRS broth are 38.45,36.24,26.21,28.43,14.62,17.52,12. 53,14.82,9.82,15.21 U/mL and 8.56,7.23, 5.36,3.46,2.09,2.12,1.25,2.49,1.49,2.23 U/mL.
