A Comparison of Nutritional Components of Apple-Pear Dietary Fiber in Different Origins

摘要 分析比较4种不同方式所得苹果梨膳食纤维含量的异同,为苹果梨膳食纤维品质评价提供依据。测定了苹果梨膳食纤维中15种主要成分,采用主成分分析及聚类分析对苹果梨膳食纤维进行评价。结果表明:主成分中贡献率最大的为半纤维素,其次为葡萄糖。基于加工方式,聚类分析将苹果梨膳食纤维分为两类。半纤维素与葡萄糖是苹果梨膳食纤维的主要特征成分,与苹果梨膳食纤维品质密切相关。 To evaluate the quality, the contents of nutrient of apple-pear dietary fiber (4 species) were compared. Fitteen nutrients of apple-pear dietary fiber were determined, and the nutritional value of apple-pear dietary fiber was evaluated based on principal component analysis and cluster analysis. Results showed that hemicellulose was the most principal components in apple-pear dietary fiber and glucose was the next. Based on the processing method, the samples were divided into two categories by cluster analysis. Hemicellulose and glucose were the characteristic component which was closely related to apple-pear dietary fiber's quality.
