摘要 海洋生物种类繁多,种属间风险程度不同;海洋食品生产周期和链条较长,造成质量安全控制难度加大,因此,提升海洋食品质量与安全控制水平势在必行。随着科学技术水平的提高,科技创新将在海洋食品质量与安全控制方面发挥更重要的作用。文章基于国内外海洋食品质量与安全产业和科技的发展现状,提出了海洋食品质量与安全科技的发展趋势,预测了国内外检测技术、质量安全监管、追溯体系、风险评估等方面的发展方向,为海洋食品质量与安全的科技创新发展提供了新思路。 There are many kinds of marine organism. Different risk levels will be caused by various biological species.Owing to long production cycle and chains,it is hard to control the quality and safety of sea food. Therefore,it is imperative to improve the control levels of quality and safety. With the development of technology,there is an important role for innovation to control the quality and safety of sea food. Based on the current situation of domestic and oversea,development trend was presented. Then the development about aspects of detection technology,quality and safety supervision,traceability system and risk assessment were predicted. A new idea will be provided for scientific and technological innovation.
