摘要 安徽省霍山县是毛竹天然分布的北部边缘,独特的地理环境及气候条件,使这里生产的毛竹笋具有特殊的品质。文章测定了霍山毛竹春笋、鞭笋和冬笋的营养成分及重金属含量。结果显示:霍山毛竹笋中蛋白质含量为1.78%~3.36%,可溶性糖含量为1.98%~3.20%,粗纤维含量为0.794%~0.924%;毛竹笋氨基酸总量为17.30~32.59 mg/g,其中必需氨基酸含量所占比例为20.7%~26.2%,鲜味氨基酸含量所占比例为34.8%~44.8%;毛竹笋中有害重金属含量均在检测限以下。分析认为,霍山毛竹笋是营养丰富、味道鲜美、无污染的食品,可放心食用。 Huoshan,a county in Anhui Province,is at the northern edge of the natural distribution of Moso bamboo.The unique geographical environment and climate conditions make the bamboo shoots produced in this area have special quality. This paper measured the nutrients and heavy metal contents in the spring shoots,rhizome shoots and winter shoots of Phyllostachys pubesens in Huoshan. The results showed that the protein content was 1.78%-3.36%,the soluble saccharide concentration was 1.98%-3.20%,and the crude fiber was 0.794%-0.924% in the bamboo shoots. The total amino acid was 17.30-32.59 mg/g,among which the essential amino acid( EAA) took up 20.7%-26.2% and the flavor amino acid( FAA) accounted for 34.8%-44.8%. The heavy metal contents in the shoots were lower than the minimal allowable amount. It was argued that the bamboo shoots produced in Huoshan County was rich in nutrition and delicious in flavor,which could be eaten safely.
