摘要
明代徐光启的《农政全书·甘薯疏》是目前研究块茎作物甘薯种植的重要史料。《甘薯疏》从甘薯品种的引进推广、田间管理、选种储存、加工食用等进行了全面论述。通过对甘薯的传统种植与加工方式的分析论述,并与现代的生产、加工方式进行对接,探讨传统农学知识中蕴含的技术方法对当下块茎作物马铃薯种植及加工的借鉴价值,从中寻找为当下马铃薯"主粮化"背景下大规模种植、"全粉化"加工有借鉴的传统农学知识。
＂Introduction to Sweet Potato＂ in the Complete Treatise on Agriculture, written by Xu Guangqi in the Ming Dynasty, is an important historical material to study the planting of tuber crops. In the book, introduction of sweet potato into China, field management, seed selection and store, processing and cooking, were discussed all-roundly. By analyzing traditional ways of planting and processing and jointing them with modern ways, this paper probes into the reference value of the technique contained in Chinese traditional agricultural knowledge for present potato planting and processing, especially the large-scale planting and pulverized processing under the background of taking potato as staple food.
