响应面优化酶法提取马铃薯皮渣中多酚的工艺 被引量:11

摘要 为研究酶法提取马铃薯皮渣多酚的最优工艺,采用单因素试验考察复合酶添加量、酶解时间、酶解pH及浸提剂乙醇浓度对多酚提取量的影响,并运用中心组合设计及响应面优化马铃薯皮渣多酚的最佳工艺参数。结果表明,各提取因素对马铃薯皮渣多酚提取量影响的次序为:浸提剂乙醇浓度>酶解pH>酶添加量。当复合酶添加量1.4%,酶解时间90 min,酶解pH 6.10,浸提剂乙醇浓度47%时,马铃薯皮渣多酚的提取量可达3.21 mg/g。 In order to study the optimal extracting technology of polyphenol from potato peels by enzymic treatment effects of compound enzyme addition, enzymolysis time, enzyme solution pH and ethanol concentration on the yield of polyphenol were investigated by single factor experiments, and the extraction parameters of the polyphenol were optimized by center combination design and response surface analysis. The results showed that the order of extraction conditions affecting potato peels polyphenol yield were:ethanol concentration 〉enzyme solution pH 〉enzyme adding amount. The optimal extraction conditions were obtained as follows:enzyme addition 1.4%, enzymolysis time90 min, enzyme solution pH 6.10, and ethanol concentration 47%. Under these conditions, the extraction yield of polyphenol was up to 3.21 mg/g.
