摘要
目的了解河南省地方食品的微生物污染情况,获得区域代表性数据。方法按照《2016年河南省食品安全风险监测工作手册》要求,覆盖区市县进行采样并检测,进行菌落总数、大肠菌群、霉菌计数、金黄色葡萄球菌、单核细胞增生李斯特菌和沙门菌的检测。结果各项微生物指标均合格的样品有166份,合格率为59.29%。菌落总数、大肠菌群、霉菌计数和致病菌的合格率分别为67.14%、61.07%、83.21%和100.00%。方便胡辣汤、油茶和花生糕的整体合格率分别为48.32%、68.49%和75.86%,其中花生糕的合格率高于方便胡辣汤,差异有统计学意义(P<0.05)。不同包装类型、不同采样时间样品的合格率差异均无统计学意义(P>0.05)。结论河南省3种地方食品均存在不同程度的卫生指标菌超标问题,致病菌污染的风险较低,食品安全监管部门应加强对地方食品的卫生监管,保障食品安全。
Objective To investigate the microbial contamination of local food and obtain the regional representative data in Henan Province. Methods Based on the Handbook of 2016 Henan Province Food Safety Risk Surveillance,the samples were selected and tested covering urban areas and rural areas. The test items included colonies,coliform bacteria,mold count,Staphylococcus aureus,Listeria monocytogenes and Salmonella. Results 166 samples were qualified in microbiological detection items,with the qualified rate of 59. 29%,and the qualified rate of colonies,coliform bacteria and mold count were 67. 14%,61. 07% and 83. 21%,respectively. The general qualified rate of spicy soup,sasanqua and peanut cake was 48. 32%,68. 49% and 75. 86%,respectively,and the qualified rate of peanut cake was higher than spicy soup,with the difference statistically significant( P 〈0. 05). There was no statistical significance in the difference of samples with different packaging types and different sampling time( P 〉0. 05). Conclusion It had different degrees of health indicators bacteria exceeded problems in three kinds of local food in Henan Province,and the risk of pathogen contamination is low. Food safety supervision departments should strengthen the health supervision and guarantee the safety of local food.
