摘要
为促进玛卡的开发利用和产业化发展,以四川省凉山州种植的3种玛卡(黑玛卡、紫玛卡和黄玛卡)为研究对象,采用高效液相色谱法结合全自动氨基酸分析仪测定比较不同品种玛卡不饱和脂肪酸(α-亚麻酸和亚油酸)及氨基酸的含量。结果表明:紫玛卡的α-亚麻酸和亚油酸含量分别为0.45 mg/g和0.09mg/g,均较黑玛卡和黄玛卡高;黑玛卡含有天冬氨酸0.06 mg/g、谷氨酸0.02 mg/g、丝氨酸0.05mg/g、组氨酸0.02mg/g、丙氨酸0.10mg/g和亮氨酸1.24mg/g,紫玛卡含有天冬氨酸0.07mg/g、谷氨酸0.02 mg/g和亮氨酸0.28 mg/g,黄玛卡含有天冬氨酸0.07 mg/g、谷氨酸0.02 mg/g、丝氨酸0.01mg/g、丙氨酸0.01mg/g和亮氨酸0.30mg/g;黑玛卡的氨基酸种类和整体含量均较紫玛卡和黄玛卡多和高。
Theα-linolenic acid,linoleic acid and amino acid content of three different Maca varieties(Black Maca,Purple Maca and Yellow Maca)cultivated in Liangshan Prefecture,Sichuan was detected by HPLC and automatic amino acid analyzer to promote development,utilization and industrial development of Maca.Results:Theα-linolenic acid and linoleic acid content of Purple Maca is 0.45 mg/g and 0.09 mg/g,higher than Black Maca and Yellow Maca respectively.The Asp,Glu,Ser,His,Ala and Leu content of Black Maca is 0.06 mg/g,0.02 mg/g,0.05 mg/g,0.02 mg/g,0.10 mg/g and 1.24 mg/g respectively.The Asp,Glu and Leu content of Purple Maca is 0.07 mg/g,0.02 mg/g and 0.28 mg/g separately.The Asp,Glu,Ser,Ala and Leu content of Yellow Maca is 0.07 mg/g,0.02 mg/g,0.01 mg/g,0.01 mg/g and 0.30 mg/g respectively.In conclusion,The amino acid kinds and total content of Black Maca both are higher than Purple Maca and Yellow Maca.
