摘要
以新疆9个主要亚麻油产区亚麻籽为实验对象研究分析了亚麻油中的香气成分。实验油样的香气成分通过固相微萃取技术(SPME)偶联GC-MS定性定量分析,共分析鉴别出57种挥发性化合物,主要包括16种醛类、8种醇类、7种酮类、4种羧酸、5种酯类、4种烷烃、10种杂环类和3种其他挥发性物质,选用22个特征指纹峰,结合GC-O确认其共有挥发性物质中具有香味活性的指纹信息,构建新疆亚麻油特征香气指纹图谱库并进行相似度评价,同时结合主成分分析(PCA)和偏最小二乘判别分析(PLS-DA)的鉴别模型,对新疆不同来源亚麻油进行鉴别和监控。
The aroma components in sesame oil were studied with flaxseed oil from 9 main oil producing areas in Xinjiang. The aroma components of oil samples by solid phase micro - extraction ( SPME ) coupled with qualitative and quantitative analysis of GC -MS, a total of 57 volatile compounds were identified and identified, including 16 aldehydes,8 alcohols,7 ketones,4 carboxylic acids,5 esters,4 alkanes, 10 heterocyclic species and 3 other volatile substances. 22 characteristic fingerprint peaks are selected and GC - 0 confirmed the common fingerprint information of Aroma Active Compounds in Xinjiang, construction of fingerprint database of sesame oil aroma and similarity evaluation, principal component analysis combined with (PCA) and partial least squares diseriminant analysis ( PLS - DA ) identification model, identification and monitoring of different sources in Xinjiang sesame oil.
