摘要
以18种市售小包装标示含有花生油的调和油为原料,对其气味、色泽、透明度、酸值、过氧化值和脂肪酸组成进行了测定,以衡量它们的质量状况。结果表明,18种调和油透明度、酸值和过氧化值均符合国家卫生标准要求;它们之间色泽、气味差异较大,50%的调和油存在花生油香味;通过对调和油脂肪酸组成进行分析,结果发现:调和油中均存在花生油成分,但大豆油、菜籽油等廉价植物油含量超过花生油含量,为调和油的主要成分,配料表中各植物油的顺序基本反映了其在调和油中含量的多少。
To evaluate the quality of commercial blend oil containing peanut oil, 18 kinds of samples with small package were collected. Their index of quality including odor, color, transparency, acid value, peroxide value and composition of fatty acid were measured and analyzed. The results showed that the transparency, acid value and peroxide value met the requirements of national health standards. But the color and odor were quite different from each other, only 50% of the samples had the flavor of peanut oil. Additionally, through the analysis of fatty acids composition, it could be found that although all samples containing peanut oil, the soybean oil and rapeseed oil were the main components. Furthermore, the content of peanut oil was far less than that of cheap ones, and the content of vegetable oil was accordance with the order of vegetable oil in ingredient table.
