摘要
磷酸盐是几乎所有食物的天然成分之一,同时也是一种被广泛用于食品加工中的食品添加剂。虽然磷酸盐对人体危害较低,但过量摄入磷酸盐也会对健康产生危害,因此GB 2760—2014《食品安全国家标准食品添加剂使用标准》中对磷酸盐的使用范围和限量都有明确规定。本文参考最新发布的国家标准,GB 5009.256—2016《食品安全国家标准食品中多种磷酸盐的测定》的检测方法,对来源于国内31家大型超市以及3家便利商店的58份乳品及乳制品样品中的正磷酸盐、焦磷酸盐、六偏磷酸盐、三聚磷酸盐、三偏磷酸盐含量进行检测并得出结果,依据GB 2760—2014对结果进行判定和初步分析,其合格率为100%。
Phosphates are natural components in most foodstuffs,and are widely used as food additives in variety of foods.However,it is harmful to human health to eat too mach phosphate.Thus,there are application scope and limit regulation in GB 2760-2014.In this paper,the contents of orthophosphate,pyrophosphate,hexmetaphosphate,tripolyphosphate and trimetaphosphatein in 58 dairy samples from 31 supermarkets and 3 drugstores in mainland of China were determined with new standard GB 5009.256-2016 and the results showed that all the samples were up to the standard GB 2760-2014.
