摘要
从浓香型大曲中筛选到1株产4-乙基愈创木酚(4-EG)的菌株,通过形态学、生理生化反应及16S r DNA序列测定与同源性分析对其进行鉴定。结果表明,该菌株为Bacillus amyloliquefaciens,编号为EG06。该菌株的选育,为研究白酒酿造中4-乙基愈创木酚的生物合成提供了参考。
In the study, a 4-ethyl guaiacol(4-EG)-producing strain was isolated from Nongxiang Daqu. Based on morphological analysis, biochemical and physiological characteristics, 16 S rDNA sequencing and homology analysis, the strain was identified as Bacillus amyloliquefaciens and named as EG06. The study provided useful reference for the biosynthesis of 4-EG in Baijiu industry.
