摘要
为探讨湿热处理对大豆蛋白-玉米淀粉抗消化复合物产率的影响,采用湿热法制备了大豆蛋白-玉米淀粉复合物,以抗消化复合物产率为指标,探讨了淀粉/蛋白比例、反应时间、反应温度及结晶时间对抗消化复合物产率的影响,并优化了制备参数。试验结果表明,影响复合物形成因素主次顺序为:蛋白-淀粉比例>反应时间>贮藏时间>反应温度。在最优化工艺蛋白-淀粉比例3︰1、反应时间1 h、反应温度75℃、结晶时间48 h条件下,抗消化复合物产率最高可达17.78%。试验结果可为大豆蛋白-玉米淀粉复合物制备提供参考。
In order to discuss the influence of hydrothermal treatment on the yield of corn starch-soybean protein complex.In this study,use corn starch and soybean protein to prepare starch-protein complex by the method of hydrothermal treatment,the effects of starch-protein ratio,reaction time,reaction temperature and crystallization time on the yield of resistant starch-protein complex were investigated.The results showed that the effect factors order on the yield of starch-complex are starch-protein ratio,reaction time,crystallization time and reaction temperature,respectively.Moreover,In the starch-complex preparation,the yield of complex was up to 17.78% when the ratio of protein to starch was 1︰3,reaction time was 1 h,reaction temperature was 75 ℃ and crystallization time was 48 h.These experimental results were very helpful and useful for industry to produce resistant starch-complex.
