摘要
以生鲜罗汉果为试材,通过测定失重率、可溶性固形物(TSS)、细胞膜渗透率(MDA)等生理指标,研究3种不同气体环境下的罗汉果贮藏品质。结果表明:在4℃的低温下,1&(CO-2:5%;O_2:2%~3%)的综合评价最佳,贮藏至60 d时,1&的罗汉果果实失重率为0.7%,MDA含量为2.29 nmol/g·mf,细胞膜渗透率为15.27%,均低于CK和2&;CK(CO_2:0.03%;O_2:21%)的罗汉果的失重率和酶活性较高,果实出现轻微腐烂,成熟衰老快,贮藏品质差;2&(CO_2:10%;O_2:2%~3%)的罗汉果细胞膜渗透率和MDA含量较高,不利于罗汉果的长期贮藏。
Using fresh Siraitia grosvenorii as tested materials,the Siraitia grosvenorii was researched storage quality,which was stored under 3 different gas environments.The experiment investigated the changes of physiological indexes,including weight-loss ratio,soluble solids(TSS),malondialdehyde(MDA) and so on.The results showed that 1(CO2:5%;O2:2%-3%) had the best comprehensive evaluation at 4 ℃.After storage of 60 d under 1,the weight-loss ratio of Siraitia grosvenorii was 0.7%,MDA content was 2.29 nmol/g·mf,cell membrane permeability was 15.27%,and the physiological indexes were lower than CK and 2.The weight-loss ratio and enzyme activity of Siraitia grosvenorii were higher,the fruit appears slightly rotten,mature and fast,and the quality of storage was poor at CK.The cell membrane permeability and MDA content of 2(CO2:10%;O2:2%-3%) were higher,which was not conducive to the long-term storage of Siraitia grosvenorii.
