Monitoring and analysis of aluminum content in flour products of Xi'an

摘要 目的了解西安市的主要面制品铝元素污染情况。方法从西安市9个区的餐馆及高校食堂购买生鲜面、馒头、葱花饼、油条等196批面制品,样品经粉碎、烘箱烘干、混匀、微波消解处理后,采用电感耦合等离子体质谱法测定其铝含量,并对结果进行分析。结果所抽检的196批面制品中,不合格样品有4批,总超标率为2.04%。超标样品分别为餐馆发酵面制品1批、高校食堂发酵面制品1批和高校食堂油炸面制品2批。结论西安市的主要面制品铝元素污染情况总体较好,但仍有超标情况,需要加大监测和监管力度。 Objective To investigate the situation of aluminum pollution of flour products in Xi'an. Methods One hundred and ninety-six batches of flour products such as fresh noodles, steamed buns, green onion cakes, and fritters were purchased from restaurants and canteens in nine districts of Xi'an. Samples were crushed, oven-dried, and mixed. After microwave digestion, the aluminum content was determined by inductively coupled plasma mass spectrometry. Results Among 196 batches of flour products, 4 batches of unqualified samples were found, with a total exceeding standard rate of 2.04%. The exceeding standard sample were 1 batche of leavened product from restaurant, 1 batche of leavened product and 2 batches of frying products from university canteens. Conclusion The pollution of aluminum in the main flour products of Xi'an is generally good, but there still has situation of exceeding standard, and more monitoring and supervision are needed.
