摘要
元代宫廷饮膳太医忽思慧所著的《饮膳正要》为元代一本集大成的营养学专著,也是我国第一部营养学专著,其在继承前代食疗、本草诸多成就的同时,也体现出了鲜明的元代蒙古族食养文化特色。基于《饮膳正要》一书探析元代蒙古族的食养文化,可以概括为"肉类为养、奶类为充、茶类为益、酒类为助",这和汉族传统食养文化有所不同,体现了中医学"因地制宜"的特点——蒙古族人民生活的地理环境形成了蒙古族独特的食养文化。
Yinshan Zhengyao was written by HU Si-hui, an imperial physician in Yuan dynasty, who took charge of the diet of the imperial family. It was the earliest monograph of Chinese nutriology and epitomized the achievement of nutriology before the Yuan dynasty. It has been a collection of the wisdom of diet and herbal treatment of previous generations, while featured the unique Mongolian diet culture in health preservation. Based on Yinshan Zhengyao, it can be summarized by a balanced diet mode ‘meat as the nutrient, dairy as the supplement, tea as the benefit and alcohol as the assistance', which is different from traditional Han diet culture in health preservation. It also embodies the TCM theory ‘treatment in accordance with local conditions', that is the geographical conditions lead to the unique diet culture of Mongolian.
