The effects of minerals microelement compound on the growth and biological characteristics of lactic acid bacteria

摘要 乳酸菌作为肠道益生菌群,在维持肠道内菌群平衡及消化运动功能上起到重要作用。为了研究天然矿物微量元素复合制剂对乳酸菌的生长及生物学特性的影响,选择保加利亚乳杆菌、李糖鼠乳杆菌、乳酸乳球菌和嗜酸乳杆菌的标准菌株作为试验菌种,对乳酸菌的增殖、酸碱耐受性、温度耐受性、细菌生长曲线及其代谢产物的抑菌效果等进行试验。结果表明:矿物粉对保加利亚乳杆菌、李糖鼠乳杆菌、乳酸乳球菌和嗜酸乳杆菌均起到增菌作用,其最适作用浓度分别为0.1、0.25、0.25和0.5g/mL,矿物质微量元素对乳酸菌的酸碱耐受性、温度耐受性及细菌抑菌作用等具有一定的提高效果。 Lactic acid as a probiotic group of the intestine plays an important role in maintaining the balance of the flora and digestive movements in the intestine. In order to study the effects of natural mineral microelement compound preparation on the growth and biological characteristics of lactic acid, standard strains of Lactobacillus bulgaricus , Lactobacillus rhamnosus , Lactococcus lactis and Lactobacillus acidophilus were selected as test strains. We tested the proliferation, acid-base tolerance, temperature tolerance, bacterial growth curve and bacteriostatic effects of metabolites. The results showed that the mineral powder increased L. bulgaricus , L. rhamnosus , L. lactis and L. acidophilus . The optimum concentrations were 0.1, 0.25, 0.25 and 0.5 g/mL, respectively. Mineral trace elements have certain improvement effects on acid-base tolerance, temperature tolerance and bacterial bacteriostasis of lactic acid.
