摘要 食品安全始终是热点问题,农药残留、重金属问题、肉质食品中致病菌及兽药残留的问题受到普遍重视。目前传统的检测方法越来越难以满足日益复杂的样品,开发便携性快速检测设备、新型的标记材料与标记技术及提高增敏效应是未来食品安全检测的重要研究方向。对食品免疫快速检测新方法及增敏技术作一综述。 Food safety had always been a hot issue. The problem of pesticide residues,heavy metal problems,pathogenic bacteria and residues of veterinary drugs in meat products had received widespread attention. At present,traditional detection methods were increasingly difficult to meet increasingly complex samples. The development of portable rapid detection equipment,new marking materials and marking technologies,and enhancement of sensitization effects were important research directions for future food safety inspections. This article reviewed the new methods of immune rapid detection and sensitization techniques of food.
