摘要
为研究膨化壳聚糖微粒对育肥猪胴体组成与肉品质特性的影响,试验选取72头(杜×长×大)杂交阉公猪,随机分为4个日粮处理组,对照组饲喂基础日粮,试验组分别在基础日粮中添加0.01%、0.02%和0.03%的膨化壳聚糖微粒,每个处理组3个重复,每个重复6头猪,试验期35 d。试验结果表明:与对照组相比,0.02%膨化壳聚糖组的宰前活重、屠宰率、眼肌面积、瘦肉率、背最长肌中粗脂肪、粗蛋白质、天冬氨酸、苏氨酸、谷氨酸、甘氨酸、丙氨酸、缬氨酸、蛋氨酸、亮氨酸、苯丙氨酸、赖氨酸、脯氨酸、C16:1、C18∶2和C18∶3水平分别显著提高了5.27%、6.82%、32.87%、13.67%、37.50%、10.41%、14.43%、39.56%、24.63%、31.71%、30.00%、37.80%、40.91%、26.45%、28.92%、17.20%、25.33%、38.54%、18.75%和36.94%(P<0.05)。而平均背膘厚、板油重和背最长肌中C18∶0水平则分别显著下降了20.35%、23.58%和24.07%(P<0.05),提示膨化壳聚糖微粒可以显著影响育肥猪的胴体组成与肉品质特性。
This experiment was conducted to study the effects of expanded chitosan particle on porcine carcass composition and meat quality.A total of 72 growing-finishing barrows(Duroc ×Landrace ×Yorkshire)were randomly divided into 4 treatments.The control group was fed basal diet,the experiment groups were added0.01%,0.02% and 0.03% expended chitosan particle respectively,each treatments consisted of 3 replicates with6 piglets in each replicates,the feeding experiment lasted for 35 days.The results showed that compared with control group,live body weight,dressing percentage,eye muscle area,lean meat percentage,and crude fat,crude pertain,Asp,Thr,Glu,Gly,Ala,Val,Met,Leu,Phe,Lys,Pro,C16 ∶1,C18 ∶2,C18 ∶3 levels of 0.02% expanded chitosan particle group in longissmus muscle of growing-finishing pigs were increased significantly by 5.27%,6.82%,32.87%,13.67%,37.50%,10.41%,14.43%,39.56%,24.63%,31.71%,30.00%,37.80%,40.91%,26.45%,28.92%,17.20%,25.33%,38.54%,18.75% and 36.94% respectively(P 〈 0.05).However,average backfat thickness,leaf fat weight,and C18:0 levels in longissmus muscle were significant decreased by 20.35%,23.58% and 24.07% respectively(P 〈 0.05).These results indicated that porcine carcass composition and meat quality were affected significantly by expanded chitosan particle.
