摘要
乳酸菌胞外多糖是乳酸菌生长过程中代谢到细胞壁外的一种天然高分子聚合物,具有分子量大、粘度大、结构复杂多样等特点。乳酸菌胞外多糖可作为一种天然的抗氧化剂、抗菌剂、抗肿瘤和提高免疫力药物应用在制药领域中,同时,其良好的保水性和流变学特性也能够加速其在食品工业的发展,所以对乳酸菌胞外多糖的物理化学特性及其应用的研究具有重要意义。对乳酸菌胞外多糖的类型结构、分离纯化方法、生理活性及其应用进行综述,旨在为乳酸菌胞外多糖在食品工业中的应用提供参考。
Lactobacillus extracellular polysaccharide was a kind of natural macromolecule compound that was metabolized to the outside of the cell wall during the normal growth of lactic acid bacteria,which had the characteristics of larger molecular weight,high viscosity,complex and diverse structure. Lactobacillus exopolysaccharide could be used as a natural anti-oxidant,antibacterial agent,the drug of anti-tumor and immunity-enhancing application in pharmaceutical industry,meanwhile,its good water retention and rheological properties could accelerate its development in the food industry,so it was very significant to study their physicochemical properties and applications. The type structure,separation and purification method,physiological activity and application of extracellular polysaccharides of lactic acid bacteria were reviewed to provide reference for the application of lactic acid bacteria extracellular polysaccharides in the food industry.
