摘要
本文对指纹图谱构建技术在食品品种判别中的研究现状和发展进行概述,包括检测挥发性物质的气相色谱质谱联用(GCMS)、电子鼻以及检测非挥发性物质的高效液相色谱(HPLC)、电子舌、电感耦合等离子体质谱(ICP-MS)等,同时对指纹图谱技术在食品品种判别方面的未来发展方向提出展望。
In this paper,the research status and development of fingerprinting technology in food variety discrimination were summarized,such as gas chromatograph-mass spectrometer(GC-MS) and electronic nose,which were used to detect volatile constituent,and high performance liquid chromatography(HPLC),electronic tongue and inductively coupled plasma-mass spectrometer(ICP-MS),which were used to detect non-volatile constituent.At the same time,the future development direction of fingerprinting technology in the food variety discrimination was prospected.
