河南省油条和熟肉制品中主要食品添加剂使用状况分析 被引量:4

The use of food additives in fried bread sticks and cooked meat products in Henan

摘要 目的了解河南省油条和熟肉制品中主要食品添加剂的使用情况。方法于2015年在全省各省辖市采集1 615份油条和3 152份熟肉制品,按照国家标准检测油条中铝和熟肉制品中亚硝酸盐的含量,检测结果按照GB 2760《食品安全国家标准食品添加剂使用标准》进行评价。结果油条中铝平均含量为0.54 g/kg,超标率为67.74%,各个采样环节超标率均较高;熟肉制品中的亚硝酸盐平均含量为0.021 g/kg,超标率为14.15%,其中路边摊位和农贸市场中熟肉制品的亚硝酸盐超标率最高,分别为21.08%和21.07%。结论油条中含铝添加剂和熟肉制品中亚硝酸盐的过量使用问题较为严重,应加强监管和宣教。 Objective To investigate the situation of the use of food additives in fried bread stick and cooked meat products in Henan province. Methods 1 615 fried bread sticks and 3 152 cooked meat products were collected from 18 cities in Henan in 2015 and examined for their contents of food additives. The results were evaluated according to GB2760. Results The average content and the over standard rate of aluminum in fried bread stick was 0.54 g/kg and 63.38 %,and it is high in all the sample sites. The average content and the over standard rate of nitrite in cooked meat products was 0.021 g/kg and 14.15%, and those at roadside stall and farmers market were 21.08 % and 21.07 %, respectively.Conclusions The problem of the excessive use of aluminum-containing additives in fried bread stick and nitrite in cooked meat products is still serious in Henan. The supervision and education on food safety should be strengthened.
