摘要
目的了解广西市售腌渍蔬菜与水果中铝污染情况,为规范监管提供参考依据。方法随机抽取农贸市场、超市、酸品店和小食杂店等场所销售的腌渍蔬菜与水果300份,使用GB 5009.268-2016检测铝含量。结果 300份样品中铝最大检出值9 110 mg/kg,超参考值363倍,问题样品(>25 mg/kg)检出率为60.67%。散装样品的问题检出率(64.40%)高于预包装样品(42.00%),差异有统计学意义(χ~2=8.761,P<0.01);散装问题样品的铝检测结果平均值(727.76 mg/kg)高于预包装问题样品(231.37 mg/kg),差异有统计学意义(t=3.332,P<0.01)。在农贸市场销售的问题检出率最高为80.65%。蔬菜类的问题检出率(67.36%)高于水果类(32.76%),差异有统计学意义(χ~2=23.468,P<0.01)。结论广西市售腌渍蔬菜与水果特别是散装样品存在铝污染的风险,建议相关监管部门规范腌渍蔬菜与水果制作过程和严厉打击滥用含铝添加剂行为。
[Objective]To understand the situation of aluminium contamination of pickled vegetables and fruits sold in Guangxi Province, and to provide evidence for regulation.[Methods]A total of 300 samples of pickled vegetables and fruits were randomly selected from primary-products markets, supermarkets, stores and small grocery stores. And the aluminum content was tested by GB 5009.268-2016. [Results] The maximum value was 9 110 mg/kg among the 300 samples, over 363 times of the standard.The positive rate of the problem sample(〉25 mg/kg) was 60.67%. The positive rate of bulk sample was 64.40% which was higher than that of prepackaged sample(42.00%), with significant difference(χ^2=8.761,P〈0.01). The average aluminum results of the sample in bulk(727.76 mg/kg) were higher than the pre-packaged samples(231.37 mg/kg), with significant difference(t=3.332,P 0.01). The positive rate in primary-products market was highest(80.65%). The positive rate of vegetables(67.36%) was higher than that of fruits(32.76%), with significant difference(χ^2=23.468, P〈0.01). [Conclusion] The risk about aluminum contamination exists in pickled vegetables and fruits, especially bulk products in markets of Guangxi Province. It is recommended that relevant regulatory authorities regulate the production process of pickled vegetables and fruits and crack down on the abuse of aluminum additives.
