摘要
为了探讨青皮核桃最佳气调贮藏(CA)条件及生理基础,以"清香"核桃青皮果实为试材,研究了单控氧(5%O_2+0.3%CO_2)以及氧气、二氧化碳复合气体条件(5%O_2+9%CO_2)对贮期青皮核桃采后生理的影响。结果表明,"清香"核桃的呼吸高峰为采后12 d,与冷藏相比,复合气体条件下的气调贮藏(CA)抑制了果实的采后呼吸强度,延缓了呼吸高峰;促进了脱氢抗坏血酸还原酶(DHAR)催化的抗坏血酸还原,更好地维持了核桃青皮的抗坏血酸含量;同时发现复合气体气调贮藏能够抑制贮藏中后期PPO活性,促进酚类物质含量的保持,提高了后期抗氧化能力,降低了果实的褐变指数和腐烂率,也更好地保持了核桃仁的理化品质。
In order to investigate the optimum atmosphere storage condition and physiological basis of green walnut, we use cv. ‘Qingxiang' as material, the effects of single oxygen(5%O2+0.3%CO2) and combined oxygen, carbon dioxide condition(5%O2+9%CO2) on postharvest physiology of green walnut during storage were studied. The results showed that ‘Qingxiang' walnut respiration peak was showed 12 d after harvest. Compared to cold storage, controlled atmosphere(CA) inhibited the post-harvest respiration rate of fruits and delayed respiration peak, promoted the ascorbic acid reductase(DHAR) catalyzed ascorbic acid reduction, and maintained the ascorbic acid content of walnut, improved the antioxidant capacity in the later period. And it also found that the controlled atmosphere storage can inhibit the activity of PPO in the late storage, promote the content of the phenolic compounds, improve the antioxidant capacity and reduce the browning index and decay rate of the fruits, also maintain the physical and chemical quality of walnut.
