中药健脾啤酒的研制 被引量:4

摘要 以大麦芽、燕麦、啤酒花、健脾中药为原辅料,在啤酒生产主发酵阶段添加中药原汁,中药原汁浓度为4%,主酵温度11℃,发酵生产健脾保健啤酒。该酒具有较协调的酒花香气和中药特有的香气,口味纯正,杀口感较好,同时具有补脾益胃,理气运滞的作用。 Malt,oats,hops,and Chinese medicine with strengthening spleen function were used as main and assistant materials respectively to produce a kind of beer. 4% of Chinese medicine juice was added in the main fermentation period and the fermentation temperature was 11 В°C. The beer obtained had a harmonious aroma composed of hops and traditional Chinese medicine. This beer also possessed a pure taste,beer killing taste,and the function of replenishing spleen and improving stomach,qi yun hysteresis effect.
