摘要
为了减少南果梨在储运过程中水分和营养成分的损失,延长其保鲜期。以玉米醇溶蛋白(zein)、乙醇溶液、甘油为原料制备涂膜保鲜液,对南国梨进行涂膜处理。在13±2℃条件下贮藏24 d,测试南国梨的感官品质、失重率、硬度、可溶性固形物和Vc含量等品质指标,评价玉米醇溶蛋白涂膜保鲜液对南国梨的保鲜效果。结果表明,在相同的贮藏环境下,经过涂膜处理的南果梨各项品质指标均优于未涂膜处理的果实。最佳的涂膜保鲜液配比为:浓度为80%乙醇溶液为溶剂、10%玉米醇溶蛋白(g·mL-1)、0.5%甘油(mL·mL-1)。研究所得涂膜保鲜液对南国梨具有较好的保鲜效果,对于涂膜保鲜技术在果蔬储运中的应用具有重要的参考价值。
In order to reduce the weight and nutritional ingredient loss of Nanguo pears in storage period and extend their shelf-life,ein,glycerin,ethanol solution were used to prepare the coating preservation liquid,and Nanguo pears were made coating treatment. ensory,weightlessness rate,hardness, soluble solid and Vc content of Nanguo pears were measured,the preservation effect of zein coating liquid was evaluated during storage at 13±2 °C for 24 d.The results showed that the quality indicators of coating Nanguo pears were better than the non-coating in the same storage environment. The best coating preservation liquid ratio was the concentration of 80% ethanol as solvent,10% zein(g·mL^-1), 0.5% glycerol(mL·mL^-1).The coating preservation liquid of the coating in this study had good preservation effect on Nanguo pears and had important reference value for the application of coating preservation technology in fruit and vegetable storage and transportation.
