摘要
对段木银耳与袋栽银耳的食用安全性和营养素进行评估,研究分析两种银耳的无机元素、氨基酸、多糖、蛋白质、脂质、农药残留等成分的含量,对比两者的食用安全性及经济价值。通过电感耦合等离子质谱法(ICP-MS)微波消解检测银耳样品中的无机元素以及重金属元素含量,采用相应国家标准或行业标准检测其营养素含量,使用毛细管柱气相色谱-电子捕获检测器法检测两种银耳中的六六六和滴滴涕农药含量。结果显示,段木银耳中的钙、镁、铁、锰元素含量高于袋栽银耳,其中钙元素含量是袋栽银耳的45倍多,而袋栽银耳中钠元素含量是段木银耳的2倍左右;段木银耳中的总糖、还原糖及脂质含量高于袋栽银耳,袋栽银耳中的蛋白质和多糖含量则高于段木银耳,但两者相差不多;两种银耳样品中均未检测出农药残留,样品中铅、汞、铬、镉等几种有害金属元素的含量也均在安全限量值以内,具有较高的食用安全性。研究表明,段木银耳的营养素和食用安全性均比袋栽银耳高,因此段木银耳的食用价值更高。
To evaluate the food safety and nutrient of the linden-cultivated and bagged tremella, the contents that two kinds of tremella includes inorganic elements, amino acid, polysaccharide, protein, lipid, pesticide residue and so on were analyzed, comparing the both of food safety and economic value. The contents of inorganic elements and heavy metal elements in two kinds of tremella were detected by inductively coupled plasma-mass spectrometry microwave digestion. The nutrient content was tested by national standard or industry standard. The determination of 666 and DDT pesticides in tremella was used by capillary column meteorological chromatography-electron capture detector. The results showed that the content of calcium, magnesium, iron and manganese in basswood tremella is higher than that in bagged tremella, in which the content of calcium was 45 times higher than that of bagged tremella. On the contrary, the content of sodium in bagged Tremella was double higher than that in basswood tremella. The content of total sugar, revertose, and lipid in basswood tremella was higher than that in bagged tremella. The content of protein and polysaccharide in bagged tremella was higher than that in basswood tremella, but there is little difference between them. None of the two kinds of tremella samples was detected to contain pesticides, and the contents of several harmful metal elements like plumbum, mercury, chromium and cadmiun in the samples of two kinds of tremella were within the safe limit value. It has high food safety. The researches showed that the nutrients and food safety of bagged tremella were higher than those of bagged tremella. Therefore, the edible value of bagged tremella was higher than bagged tremella.
