摘要
以富士苹果为原料,研究了不同浓度的羧甲基纤维素钠(CMC-Na)、乳酸链球菌素、纳他霉素为原料的复合涂膜剂对鲜切苹果品质的调控作用。以蒸馏水浸泡作为空白对照,根据感官评价进行复合涂膜正交试验,得到复合涂膜剂最佳配方为:0.5%羧甲基纤维素钠+0.010%纳他霉素+0.015%乳酸链球菌素。经涂膜的鲜切苹果以PE袋真空包装、4℃贮藏15 d后,硬度值8.3 kg/cm2、L*值72.33、可溶性固形物含量12.9%,分别较对照提高20%、11.52%和12.17%。
With Fuji apple as raw material, the control function of different concentrations of carboxymethyl cellulose sodium(CMC-Na), Nisin and Natamycin as compound coating agent on fresh-cut apple quality was studied,With distilled water to immerse fresh-cut apple as blank control. an orthogonal experiment of composite coating was carried out according to sensory evaluation,The best formula of the composite coating agent was as followed: carboxymethyl cellulose sodium 0.5%, Natamycin 0.010%, Nisin 0.015%.The coated fresh-cut apple was vaccum-packed in PE bag and stored at 4 ℃ for 15 days, the hardness was 8.3 kg/cm^2, L*value was 72.33, soluble solids was 12.9%, which was increased by 20%, 11.52% and 12.17% respectively than control.
