摘要
测定结果表明 :西藏日喀则地区的荞麦中富含蛋白质、脂肪、淀粉、维生素、矿物质、氨基酸等多种营养成分 ,与其它谷物如小麦、大米等相比 ,荞麦的蛋白质、脂肪含量较高 ,VB1,VB2 ,Vpp(烟酸 ) ,Vp(芦丁 )的含量较为丰富 .荞麦中含有多种易被人体吸收的矿物质元素 ,其中Mg含量较高 ,Fe含量较丰富 .荞麦中含有 8种人体必需氨基酸 ,且配比较合理 .
The result of determination indicates that buckwheat from Xigaze district of Tibet has a lot of nutrition, such as protein,fat,starch,vitamin, mineral elements and amino acid.Comparing with other grain crops(wheat, rice etc.),buckwheat has higher content in protein and fat, and is rich in V B1,V B2,V pp,V p.Many mineral elements of buckwheat are easily absorbed and the content of Mg and Fe is higher than the others'. Buckwheat has 8 essential amino acids with a reasonable proportion.
