摘要
本文介绍了可食性膜及其特性,可食性膜的类型,国内外的研究进展情况。从目前的现状来看,世界一些发达国家已投入了相当的人力、物力,对多糖薄膜、蛋白质薄膜、脂质薄膜,以及由上述材料中两种或两种以上复合而成的复合薄膜等可食性膜的成膜特性及其性能进行了研究,同时也提出了可食性膜尚存的问题。
The article has dealt with the kinds of the edible film and their features, and the re- search progress abroad. Looking over the current situation, some developed countries in the world have already put a massive man power and materials into polyose film, protein film, lipidic film in studying the forming feature and its performance of the edible film, upon which the compound film is made from the two kinds compound above mentional, and at the same time pointing out problems existing in the film.
